A SPECIAL THANKSGIVING ISSUE

turkey

Friends Be True, And Good Health Be Yours During This Thanksgiving Holiday. Wishing You Many Thanks From The Staff At USAAA For Your Continued Support. Happy Holidays.

The following are some recipes and links for your Thanksgiving dinner that address the Gluten Free, Casein Free (GFCF) diet.

Let's Talk Turkey—A Consumer Guide to Safely Roasting a Turkey

Click here for information from USDA on every facet of getting a turkey from the store to the dinner table.

turkey
Shelton Turkeys are NEVER fed or administered any antibiotics or artificial growth stimulants at any time. Shelton turkeys have been the standard of excellence since 1924 in Southern California.
carving
Carving a Turkey, By: Allrecipes Staff
While nothing is as impressive as a beautiful, bronzed turkey on the holiday buffet, it's much easier to carve the bird in the kitchen than at the table. These easy-to-follow steps take that turkey from centerpiece perfection to neat slices on your serving platter.
gravy
Easy GFCF Gravy
Slowly mix tapioca mixture into broth/scrapings, stirring briskly with a whisk. (If you add the tapioca mix too fast, you'll end up with a gelatinous mess, so be patient!)

Karina's Veggie Loaf
Serves 8, adapted by Ellen A.

Ellen A syas, "Back in '06, I posted a recipe for Karina's Veggie Loaf which I adapted from her blog, Gluten Free Goddess. Tonight I made it again (for probably the umpteenth time!) but with a few more changes. I think I've arrived at what I think is the final and best version, at least for me.

stuffing

Savory Stuffing
Woggle-Bug's tip: Stuffing can be cooked separately in a large glass casserole dish, but more stock may be needed to replace the moisture that usually comes from the turkey cavity.

cranberry

Corn free Cranberry Sauce Variations
1. Some people say that no water should be added and that the cranberries should be served with a minimum of juice;

2. others add a little tapioca starch at the end of the cooking time to give a thicker consistency to the sauce; it's a matter of taste!

pie

Vegan Pumpkin Pecan Pie Source - Whole Foods.
One mother says, "I would replace the soymilk in either one of these recipes with rice, almond or coconut milk!" Another mother says, "substitute coconut milk for evaporated milk, substitute eggs with egg replacer
and use honey in place of sugar.
"

pumpkinpie
GFCF Pumpkin Pie with coconut milk
Katherine...wow...coconut milk in the pumpkin pie? I'm totally trying that.

Golden Roasted Turkey - Gluten-Free

Recipe from Whole Foods Market:
This deliciously moist roasted turkey is surprising in its ease of preparation. Exactly what you remember from Thanksgiving dinners of old - only better. While you can prepare this turkey recipe without the brining step, we highly recommend you to give it a try as this process produces wonderfully succulent meat. When set on the table, this beautiful bird is guaranteed to elicit oohs and aahs.
